Southern Style Vegetables
Corn Fritters
1 cup flour
1 teaspoon salt
1 tablespoon sugar
½ cup milk
2 eggs, beaten
2 teaspoons baking powder
8 oz. frozen corn, thawed
Oil for frying
Sift dry ingredients together. Add eggs, milk and corn. Drop by spoonfuls into hot grease and cook until done.
Notes: I like to fry these in a mixture of 1 part oil and 1 part butter. Also, you can use canned corn, drained.
