Quick and Healthy Pork Recipes
Quick Pizza Pasta
- 1/2 pound thin spaghetti, vermicelli or rotini , cooked al dente
- 1 jar pizza sauce (14 ounces)
- 1 cup shredded part-skim mozzarella cheese
- 1/3 cup grated parmesan cheese
- Additional toppings as desired
- Preheat oven to 400 degrees. Grease a casserole dish.
- Toss the pasta with the pizza sauce, mozarella cheese and any additional toppings that you desire, place in the casserole dish.
- Top with the grated parmesan cheese.
- Bake at 400 degrees for 15 minutes or until heated through and cheese has melted.
Serve with garlic bread and a tossed salad. This was always a favorite at my house. I have even prepared this recipe in huge quantities for hordes of teenagers and it was a hit!
As a bonus, I will mix the recipe up and place into small freezer containers, sprinkled with cheese on top. Seal and freeze. You can then take straight out of the freezer and into the microwave until hot. My kids ate this a lot as a lunch when a microwave was available, or as a healthy after school snack.
Swiss Olive Spaghetti
- 8 ounces spaghetti
- 8 ounces shredded swiss cheese
- 1 cup sliced pimiento stuffed olives or sliced good quality ripe olives (pitted)
- 1 cup heavy cream
- 1/2 cup milk
- Cook spaghetti al dente according to package directions. Drain and return to saucepan.
- Add the shredded cheese, olive, cream, and milk. Toss to combine.
- Cook and stir over medium heat until cheese is melted and sauce is thickened. Season with salt and pepper to taste. Turn into serving dish. Serves 8.
