Strawberry Jam

1 pound strawberries
1 pound sugar
Hot sterilized jars and lids

  1. Wash the fruit thoroughly.  Cut away any blemishes.  
  2. Crush strawberries.
  3. Weigh fruit and sugar. Weights don’t have to be exactly 1 pound, but use an equal amount of sugar as berries.
  4. Put fruit and sugar into a heavy kettle large enough for the mixture to boil up.  Heat to boiling point, stirring constantly until sugar is dissolved.
  5. Cook until thick, stirring frequently to prevent burning.  The cooking time will be from 10 to 20 minutes.
  6. Jam is done when thick.  Pour immediately into hot sterile jars and seal.
