Strawberry Jam
1 pound strawberries
1 pound sugar
Hot sterilized jars and lids
- Wash the fruit thoroughly. Cut away any blemishes.
- Crush strawberries.
- Weigh fruit and sugar. Weights don’t have to be exactly 1 pound, but use an equal amount of sugar as berries.
- Put fruit and sugar into a heavy kettle large enough for the mixture to boil up. Heat to boiling point, stirring constantly until sugar is dissolved.
- Cook until thick, stirring frequently to prevent burning. The cooking time will be from 10 to 20 minutes.
- Jam is done when thick. Pour immediately into hot sterile jars and seal.
