Turnip Greens
1 pound turnip greens
4 turnips
2 teaspoons olive oil
1 large clove garlic, minced
dash hot pepper sauce
pinch of salt
½ cup water or broth
vinegar to serve
- Wash the greens well. Discard tough stems, slice remaining stems down the middle and then cut greens crosswise into pieces. Dice turnips.
- Heat the oil in a large pot. Add the garlic and cook for a minute.
- Add the water and diced turnips. Simmer the turnips until nearly tender, then add the greens, hot pepper sauce and a pinch of salt.
- Simmer 8 to 12 minutes until greens are tender.
- Serve with vinegar if desired.
