Turnip Greens

1 pound turnip greens
4 turnips
2 teaspoons olive oil
1 large clove garlic, minced
dash hot pepper sauce
pinch of salt
½ cup water or broth
vinegar to serve

  1. Wash the greens well.  Discard tough stems, slice remaining stems down the middle and then cut greens crosswise into pieces.  Dice turnips.
  2. Heat the oil in a large pot.  Add the garlic and cook for a minute. 
  3. Add the water and diced turnips.  Simmer the turnips until nearly tender, then add the greens, hot pepper sauce and a pinch of salt.
  4. Simmer 8 to 12 minutes until greens are tender.
  5. Serve with vinegar if desired.
