Pumpkin Nut Bread

Many years ago, I won a blue ribbon with this bread in the county fair. Ah, for the good old days when I had time to go to the fair, much less enter... This quick bread uses the muffin method. Do not over mix the dough.

Sift together:
2 cups sifted flour
2 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
½ teaspoon nutmeg

1 cup solid pack pumpkin
1 cup sugar
½ cup milk
2 eggs

¼ cup softened butter
1 cup chopped pecans

Combine dry ingredients, wet ingredients, and butter.  Mix until well blended.  Stir in nuts.  Spread into a well greased 9x5x3” loaf pan.  Bake at 350 degrees for 45 to 55 minutes.   Makes 1 loaf.
