Quick Orange Nut Bread

This quick bread uses the muffin method. Don't over mix.

2 cups unbleached all-purpose flour
½ teaspoon salt
1 teaspoon baking powder
½  teaspoon baking soda
1 orange (rind and juice)
Boiling water
2 tablespoons melted butter or margarine
1 cup sugar
1 egg, slightly beaten 1 teaspoon vanilla  
½  cup chopped walnuts

  1. Preheat the oven to 350 degrees. Grease an 8 ½  by 4 ½ inch loaf pan.
  2. Mix the dry ingredients in a bowl.
  3. Grate the orange and squeeze the juice in a measuring cup. Add enough boiling water to make a cupful.
  4. Combine with the orange rind, melted fat, sugar, beaten egg, and vanilla in a bowl and stir until blended.
  5. Stir into the dry ingredients just until mixed.  Add the nuts. Pour into the loaf tin.
  6. Bake 1 hour. Turn onto a wire rack to cool.
