Zucchini Nut Bread

 
3 eggs
1 cup oil
2 1/2 cups sugar
2 teaspoons vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon cinnamon
2 cups grated zucchini
1 cups nuts
  1. Beat eggs,  add salad oil, sugar, and vanilla. 
  2. Sift together:  flour, salt, baking soda, baking powder, and cinnamon. 
  3. Add the wet ingredients to the dry ingredients and mix until just mixed.
  4. Add the zucchini and chopped nuts. Stir again only until mixed. 
  5. Bake in two greased loaf pans on hour at 325 degrees or until done.  This bread freezes well.

 

Fruit and Spice Zucchini Bread

 
3 eggs

2 teaspoons vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon allspice
½ teaspoon cloves
½ teaspoon nutmeg
2 cups grated zucchini
1 cups dried fruit, chopped
  1. Beat eggs,  add salad oil, sugar, and vanilla. 
  2. Sift together:  flour, salt, baking soda, baking powder, and spices. 
  3. Add the wet ingredients to the dry ingredients and mix until just mixed.
  4. Add the zucchini and dried fruit. Stir again only until mixed. 
  5. Bake in two greased loaf pans on hour at 325 degrees or until done.  This bread freezes well.
