Grilling or barbecue is a great way to cook fish. Since fish cooks quickly, care must be taken to avoid overcooking or allowing the fish to dry out.
The use of a basting sauce is recommended to prevent drying and adds a nice flavor as well. Additionally a well oiled grill basket, mesh grill, or an oiled piece of foil on the grill will give extra support and prevent the fish from falling through the grill.
Grill fish approximately 4 inches from moderate heat. Fish should take about 10 to 20 minutes total to cook on the grill, depending on the thickness of the fillets or steaks.
Charcoal Grilled Pan-Dressed Fish
3 pounds pan-dressed fish, fresh or thawed
1/4 cup melted butter or oil
1/4 cup lemon juice
1 1/2 teaspoons salt
3/4 teaspoon paprika
1. Clean, wash, and dry fish. Place fish in a well oiled, greased, hinged wire grill basket.
2. Combine remaining ingredients and mix well.
3. Brush fish with sauce. Cook about 4 inches from moderately hot coals for 5 to 8 minutes.
4. Baste with sauce, turn and cook for 5 to 8 minutes longer or until fish flake easily when tested with a fork. Serves 6.
